on Atta Kachoris, Chops and Rolls
Stuffing for each of the rolls, chops and kachoris
made of Atta are same. Accordingly, healthy recipes chefs have used boiled
potatoes, 50grams paneer in cube forms and common spices found easily in one’s
kitchen.
Once potatoes are boiled, we shallow fry the paneer
and add the boiled potatoes, along with a pinch of common salt, turmeric
powder, chili powder, cumin and coriander powder, Amchur powder and garam
masala. You have to stir for a while to get a pleasant aroma coming out from
the dish. Meanwhile we have to prepare the Atta dough by adding one 1tablespoon
of oil and water as per requirement.
To start preparing kachoris, we have to take a small
piece of the dough and fill in the stuffing, while give a flat shape before
making them ready to fry. On the other side, in case of chops, we have to
follow the same procedure but make the dough in spherical shape. Along with
this, in case of rolls, our dough should be in cylindrical shape. Now, we have
already prepared the dough, we have to move ahead to shallow fry them and serve
hot with raita.
Why
Atta is better than Maida
In case of refined flour or Maida, farmers de-skin
the grains post harvest of the crops and remove the original skin of the
respective grain under it. Because of this, Maida has endosperm, because of
which it loses a majority of essential nutrients, while retains rich amount of
carbohydrates. Moreover, because Maida does not contain any dietary fiber, if
you consume it consistently, it creates an adverse effect on your digestive
system.
Atta or wheat flour on the other side uses both bran
and endosperm. As bran is an insoluble type of fiber, wheat flour is relatively
lighter and one can easily digest it. In this way, Atta made items not only let
you avoid putting on weight, but also help in easy digestion and boost your
health. If this is not enough, Atta/wheat flour incorporates vitamin B in
different forms with iron, calcium, phosphorus, magnesium, potassium and zinc,
while trace elements, including sodium in very less amount.
